This isn’t really a post about lemon ricotta pancakes. I wanted to do a post about lemon ricotta pancakes. The only problem was I didn’t actually have any ricotta cheese. I did, however, have a tub of cottage cheese that was nearing its expiration. I feel like cottage cheese gets a bad rap. People either love it or hate it. Is it a texture thing? It is a little heavier than ricotta but it’s so creamy and delicious. And it’s great in pancakes.
I used Bisquick mix because it’s convenient and I was having a lazy morning. I added lemon oil and lemon zest to the batter for extra-lemony flavor. And fresh strawberries are always a great compliment.
Here’s my recipe:
1 cup Bisquick mix
1/2 cup milk
1 egg white
1/3 cup cottage cheese
1/2 tsp lemon zest
1/4 tsp lemon oil
Combine all ingredients except cottage cheese in large mixing bowl and mix until smooth. Add cottage cheese and stir until combined.
Drop batter by quarter cup fulls into hot pan greased with butter or nonstick spray. When bubbles form and edges of pancakes are set, flip them and cook for an additional minute.
Serve warm with sliced strawberries and maple syrup.
Makes six small pancakes.
If you don’t have lemon oil you can double up on the zest to get more intense flavor.
