Pizza in French is “pizza”. I know. Not terribly exciting. The French don’t always come up with their own words for things. Pizza is one of them. “Weekend” is another, oddly enough.
Anyways, remember how I said I was finding ways to use up my figs? Enter fig, prosciutto and arugula pizza.
I started with a pre made pizza dough from the grocery store. Did you know they had those? Your grocery store probably makes them, don’t be afraid to ask. There’s also an Italian 4 cheese blend, prosciutto, baby arugula and burrata.
I had burrata in mind but I didn’t really know how expensive it was. The woman at the deli asked what I was looking for and I said “fancy cheese for pizza”. She pointed out the burrata and then mozzarella as a less expensive option. I happened to be at the grocery store with my mom so she footed the 8 bucks for the good cheese. If you don’t have a sugar mama for ridiculously expensive cheese, go with the mozzarella.
I rolled out the dough and then hand stretched it to make a rectangle.
I put the dough on a silpat (a fancy French nonstick baking mat), brushed the dough with olive oil and scattered the 4 cheese blend on top.
Then went on my sliced figs. Aren’t they so cute?! They look like teeny tiny water melon slices.
Then I just tore the burrata into hunks (per the nice deli lady) and spread that on top and threw it in the oven.

While it baked I tossed the arugula in some olive oil whisked together with lemon juice, lemon zest, and a little salt and pepper.
After 18 minutes it came out golden brown and crispy.
I topped it right away with sliced prosciutto so it would warm through.

Then I topped the whole thing with bunches of lightly dressed arugula. Ain’t she a beaut? Minus that weird mutant crust bubble at the back.

Look at that melty delicious burrata cheese. Yum.
I was worried it might be too dry without any sauce but the burrata cheese, juicy figs and dressed arugula add just the right amount of moisture.
Here’s my (loose) recipe:
1 package pizza dough
Sliced fresh figs
Prosciutto
Shredded Italian 4 cheese blend
Fresh burrata or mozzarella cheese
Baby arugula
I haven’t given any measurements for the toppings because the ratios are totally up to you. I used 2 sliced fresh figs, three slices of prosciutto (sliced into smaller strips), about half the bag of shredded cheese, one ball of burrata cheese, and two big handfuls of arugula. For the dressing I used about a tsp of olive oil, a tsp of lemon juice, a half tsp of zest and a pinch each of salt and pepper.
Roll out with a little flour or hand toss pizza dough. Place on lightly greased pan. Brush the crust with olive oil and top with shredded cheese, sliced figs, and burrata cheese. Bake according to package instructions (mine stipulated a 425 degree oven for 18-22 minutes). After pizza crust is browned, remove it from the oven and top with sliced prosciutto and dressed arugula.
