Everything’s More Fun with Funfetti {nonpareils}

Funfetti is one of my favorite things to do to a baked good. That’s right, I’m using it as a verb. You can Funfetti cake, you can Funfetti pancakes, and today I’ve Funfetti’d for your nom-ing pleasure some delicious rice crispy treats.

Not to be confused with Rice Krispies Treats, as Kellogg’s official recipe calls for 6 cups of Rice Krispies. When I’ve made treats using their ratio they come out dry and too firm. I like my treats soft and heavy on the marshmallow.

Enter rice crispy treats made with REAL butter (not margarine, don’t even think about it) and 2/3 the puffed rice called for in the official recipe.

You know how a few weeks after you’ve opened the bag of marshmallows they get all sticky and form this mutant super-marshmallow that you have to scrape out of the bag? ‘A few weeks?’ you’re asking yourself. ‘Who would allow them to sit around that long?’ Well it happens. There are 64 in the bag, you know. I had eaten 24 already and I’M ONLY ONE PERSON. Anyways, that’s why my marshmallows look like they’ve suffered a recent bout of smallpox.

Step 1! Assemble your ingredients. This is important, as you’ll want your puffed rice already measured out when you take the melted marshmallows out of the microwave.

Step 2! Melt the butter and the marshmallows in the microwave for about 2 minutes, remove carefully and stir to combine.

Step 3! Gently stir in puffed rice and nonpareils (sprinkles. In French literally “without equal”).

Step 4! Press into wax paper-lined pan using a spatula and wax paper if needed. It will probably still stick to the wax paper and definitely to the spatula. Salvage as many as you can and eat the rest off the paper. No one will know.

Once they are cooled, cut into squares and squee over their adorable rainbow goodness. Devour immediately.

Here’s my adapted recipe:

40 large marshmallows
4 cups puffed rice cereal
3 TB unsalted butter
1-2 tsp rainbow nonpareils

In microwave-safe bowl heat butter and marshmallows for 2-3 minutes, stirring once after 2 minutes. Remove from microwave and stir mixture until smooth. Add puffed rice and nonpareils and stir gently until well-coated. Careful not to over mix or you’ll crush the cereal. Gently press into a wax paper-lined pan (either 9×9 or 9×13 depending on how thin you want your treats). Try not to press too hard, you want them to be light and airy. Top with extra nonpareils if desired. Allow them to cool, then cut into 2 inch squares. Best eaten the same day.
